Ingredients

1/2 375-g pkg Longo’s Cauliflower Florets

5 clementines, divided

1/4 cup Longo’s Extra Virgin Olive Oil

2 tbsp fresh lemon juice

1/2 tsp each salt and pepper

1 tub (142 g) Longo’s Organic Fancy Mixed Greens

1/2 cup pomegranate arils

Directions

DIRECTIONS

Slice cauliflower florets thinly. Zest and juice 1 clementine; peel and segment remaining clementines.



Combine cauliflower and segmented clementines in salad bowl.



Whisk together clementine zest and juice, oil, lemon juice, salt and pepper. Toss with cauliflower and oranges. (Make-ahead - Cover and refrigerate for up to 1 day.)



Toss in mixed greens and pomegranate arils just before serving.


A Dash of Advice

For a savoury contrast, add thinly sliced red onions to the salad.Sprinkle a few petals of Bella lodi cheese over top of the salad before serving for an extra hit of flavour.
