APPLE SAGE STUFFED SPIRAL HAM

Ingredients

2 to 3 large Ontario Honeycrisp or Gala apples

2 pkgs (20g each) fresh Longo's Sage (approx.)  

1 Longo's Spiral Sliced Honey Baked Ham (fully cooked), 3 to 4kg

1 cup fresh Longo's Apple Cider (or water)  

Glaze:

1/2 cup apple jelly 

2 tbsp Longo's Maple Syrup

2 tbsp Longo's Dijon Mustard 

1 tbsp Longo's Pasteurized Filtered Apple Cider Vinegar

Directions

Glaze: Warm apple jelly, maple syrup, Dijon and vinegar in small saucepan set over medium-low heat, stirring until jelly is melted and glaze is well combined. Set aside.  

Core, halve and very thinly slice apples. Pick sage leaves from stems. Carefully tuck slices of apple and sage leaves between the spiral slices all over the ham, turning the ham as needed to reach all sides. Use toothpicks or skewers to secure the base of the ham if the spiral starts to loosen. Place ham on rack in roasting pan, bone side up. Add cider to the bottom of the roaster and tent with foil. 

Roast in preheated 350°F oven for 1 hour. Remove foil and continue to roast, basting occasionally with glaze, for 1 hour or until the internal temperature registers 140°F. Rest ham for 20 minutes before slicing between spirals to serve.
