APPLE TURKEY CURRY

Ingredients
1 large apple, cored and diced
1 onion, diced
1 tbsp Longo's Essentials Curry Powder
1 can (400mL) Longo's Essentials Coconut Milk
1/2 cup Longo's Essentials Chicken Broth or Longo's Essentials Vegetable Broth
2 cups chopped cooked turkey (from Easy Turkey Dinner recipe)
1 cup frozen Longo's Essentials Peas
1 1/2 tsp cornstarch
3 tbsp chopped fresh cilantro
Directions
Heat 2 tbsp Longo's Mediterranean Extra Virgin Olive Oil over medium heat. Sauté apple, onion and curry powder for about 3 minutes or until fragrant and softened. Add coconut milk and chicken broth; bring to a boil. Add turkey and peas; simmer for 5 minutes.
Whisk cornstarch with 2 tsp water and stir into skillet. Simmer for about 1 minute or until thickened. Sprinkle with cilantro to serve. Season to taste, if desired.
Rice Addition: Keep rice in the pantry for a quick add-on to this creamy curry or cook up some noodles to serve with it. Bring 2 cups of water or Longo's Essentials Chicken Broth to boil with 1 cup Longo's Long Grain Rice. Reduce heat to low; cover and cook for about 15 minutes or until water is absorbed and rice is tender. Fluff and season as desired.
Vegan Variation: Omit cooked turkey and chicken broth. Substitute 1 pkg (350g) extra firm tofu, diced, and vegetable broth.
