COCONUT SHRIMP WITH SPICY CRANBERRY LIME DIP

Ingredients
1 pkg (500g) Longo's Extra-Large Coconut Breaded Shrimp (28-33 count)
Spicy Cranberry Dip:
1/2 cup cranberry sauce
1 lime, zested and juiced
2 tbsp finely chopped fresh Longo's Organic Mint
1 to 2 tsp Longo's Curato Chili Pepper Spread (to taste)
Directions
Spicy Cranberry Lime Dip: Heat cranberry sauce in microwave-safe bowl for 30 seconds to loosen. Stir sauce with lime zest, lime juice, mint and pepper spread until well combined. For a smoother sauce, blend or purée in food processor or blender. Makes 2/3 cup.
Prepare shrimp according to package directions; pile onto platter and serve warm with the Spicy Cranberry Lime Dip on the side.

Curry Mango Dip: Blend 1/2 cup Longo’s Classic Hummus or thick plain yogourt with 2 tbsp each Longo’s Mango Peach Chutney and chopped fresh cilantro, along with the juice of 1/2 lime and 1/2 tsp Longo’s Essentials Curry Powder. Serve with Longo’s Traditional Mini Potato Samosas or Longo’s Lamb Spiedini.
Creamy Pesto Dip: Blend 1/2 cup Longo’s Sour Cream with 3 tbsp Longo’s Basil Pesto, 2 tbsp finely chopped fresh Longo’s Basil, along with 1 tsp each grated lemon zest and lemon juice. Serve with Longo’s Ricotta & Feta Cheese Phyllo Rolls, Longo’s Fully Cooked Beef Meatballs or Longo’s Chicken Spiedini.
