CREAMY CAST IRON SHRIMP PASTA

Ingredients

1 pkg (500g) Longo’s Spaghetti 

1 pkg (255g) Longo’s Seriously Sweet Tomatoes

1 pkg (340g) Longo’s Organic Large Black Tiger Raw Shrimp, thawed and shelled

4 cloves garlic, sliced

1 1/2 cups 35% whipping cream

1/3 cup Longo’s Grated Parmesan Cheese

Fresh Longo’s Organic Basil (optional)

Directions

Cook spaghetti in a large pot of boiling salted water for about 9 minutes or until al dente. Drain and return to pot. 

Heat 2 tbsp Longo’s Mediterranean Extra Virgin Olive Oil in cast iron skillet on medium-high grill or heat. Add tomatoes and 1/4 tsp each salt and pepper and cook for about 4 minutes or until starting to blister. Add shrimp and garlic and stir for about 4 minutes or until shrimp are pink. Add cream and Parmesan; bring to a simmer. Simmer gently, stirring, for about 2 minutes or until reduced slightly. Toss well with pasta to coat. Serve immediately with additional cheese and basil, if desired.
