Ingredients
1 pkg (about 450 g) Longo’s Pork Sausages of your choice
1 pkg (227 g) Longo’s Sliced Mushrooms
1 can (400 mL) Longo’s Organic Coconut Milk or Longo’s Organic Coconut Whipping Cream
1 pkg (450 g) Longo’s Penne Rigate Pasta
1 pkg (142 g) Longo’s Organic Baby Spinach
Longo’s Grated Parmesan Cheese (optional)
Directions
Using small knife, remove casing from sausages and pinch sausage meat into about 1-inch pieces.
Heat 1 tbsp Longo’s Mediterranean Extra-Virgin Olive Oil in large non-stick skillet over medium-high heat. Sauté mushrooms and sausages for about 8 minutes or until mushrooms are golden and sausage meat is no longer pink inside. Add coconut milk and bring to a boil.
Meanwhile, cook pasta in large pot of boiling salted water for about 8 minutes. Add spinach and drain. Return to pot, stir in sausage mixture and warm over low heat. Sprinkle with Parmesan, if using.
