DELUXE GRILLED CHEESE AND BUTTERNUT SQUASH SOUP

Ingredients
1 container (700mL) Longo’s Butternut Squash Soup
1/4 cup finely fresh grated Longo’s Curato Grana Padano DOP
2 tbsp mayonnaise
8 slices (3/4-inch thick) Longo’s Pesto Parmesan Loaf
1 1/2 cups Longo’s 3 Cheddar Shredded Cheese Blend
Directions
Heat soup according to package directions and keep warm.
Meanwhile, whisk together Grana Padano, mayonnaise and 2 tbsp Longo’s Mediterranean Extra Virgin Olive Oil.
Place bread on work surface and spread cheese mixture over one side of each slice.
Heat large skillet over medium heat and place 4 of the slices into skillet, cheese spread side down. Divide shredded cheese among each slice and top with remaining bread slices, cheese spread side up.
Cook, gently pressing sandwiches with spatula, flipping once, for about 6 minutes or until golden brown. Serve with soup.
