DILL-ICIOUS SPRING SALAD

Ingredients
8 cups or 1 tub (142g) Longo’s Organic Spring Greens
1 large carrot, sliced
2 Longo’s Mini Cucumbers, sliced
6 large radishes, sliced
1 small yellow bell pepper, sliced
1 cup Longo’s Seriously Sweet Tomatoes, halved
1/2 cup Longo’s Essentials Frozen Peas, thawed
1/2 cup sliced green onions
1/4 cup loosely packed fresh Longo’s Organic Dill Sprigs
Dressing:
1/2 cup cottage cheese
1/3 cup Longo’s Regular or Light Mayonnaise
1/4 cup loosely packed fresh Longo’s Organic Dill
1/4 cup sliced green onions
1/4 cup Longo’s Curato White Wine Vinegar
1 tbsp Longo’s Unpasteurized Pure Liquid Honey
1/2 tsp salt
Freshly ground black pepper to taste
Directions
Dressing: Combine cottage cheese, mayonnaise, dill, green onions, white wine vinegar, honey, salt and pepper in blender. Blend until smooth. (Make ahead: Dressing can be reserved in the refrigerator for up to 4 days.) Arrange spring greens in large shallow salad bowl. Scatter all vegetables and herbs overtop. Serve with dressing on the side.
