EASY TURKEY DINNER

Ingredients

1 Longo's Local Ontario Raised Without Antibiotics, Grain-Fed Turkey Boneless Breast Roast (about 1.1kg) 

500g Longo's Yellow Flesh Potatoes, quartered lengthwise 

1 onion, coarsely chopped 

1 1/2 tsp Italian seasoning 

1 cup Longo's Essentials Vegetable Broth or Longo's Essentials Chicken Broth 

1 pkg (500g) Longo's Deluxe Blend Mixed Vegetables

Longo's Cranberry Sauce (optional) 

Directions

Brush turkey with 2 tbsp Longo's Mediterranean Extra Virgin Olive Oil and season with 1/2 tsp each salt and pepper. Place in centre of small roasting pan lined with parchment paper. 

Toss potatoes, onion and Italian seasoning with 2 tbsp Mediterranean Extra Virgin Olive Oil and 1/4 tsp each salt and pepper. Spread around turkey roast in pan. Pour broth over potatoes; cover pan and roast in preheated 350°F oven for 1 1/2 hours. 

Uncover and continue to roast for 30 minutes or until an instant read thermometer registers 165°F. Tent with foil and rest for 15 minutes before slicing. Chop 2 cups of the turkey and reserve for the Apple Turkey Curry recipe. 

Meanwhile, heat vegetables according to package directions and toss with 2 tbsp Longo's Mediterranean Extra Virgin Olive Oil and 1/4 tsp each salt and pepper. Serve with turkey and potatoes. Spoon pan juices overtop and serve with cranberry sauce, if desired.
