EVERYTHING BAGEL PRIME RIB

Ingredients

1 Longo’s CAB Prime Rib Roast, about 2 ribs or 1.5kg, cut and tied

2 tbsp Longo’s Country Churned Salted Butter

1/4 cup Longo’s Everything Bagel Seasoning

Zesty Goat Cheese Sauce:

2 tbsp Longo’s Country Churned Salted Butter

2 tbsp Longo’s Organic Unbleached All Purpose Flour

1 large clove garlic, minced

1 1/2 cups Longo’s Organic Homogenized 3.8% Milk

4oz Longo’s Original Goat’s Milk Cheese (half a 250g log)

2 tbsp Longo’s Prepared Horseradish

1 tbsp Longo’s Everything Bagel Seasoning

2 tsp Longo’s Curato Red Wine Vinegar

2 tbsp chopped fresh Longo’s Organic Chives

Directions

Zesty Goat Cheese Sauce: Melt butter in saucepan set over medium heat. Add flour and garlic; cook, stirring, for 1 minute. Gradually whisk in milk; bring to a gentle simmer, stirring until thickened. Reduce heat to low and whisk in goat cheese until melted into sauce and smooth. Stir in horseradish, 1 tbsp bagel seasoning, vinegar and chives. (Make-ahead: Sauce can be made, omitting chives, up to 2 hours ahead and kept at room temperature. Rewarm gently as needed and stir in chives just before serving.)

Pat roast dry with paper towel. Rub meaty portions of roast all over with butter; coat evenly with 1/4 cup bagel seasoning. Place on rack in small roasting pan. Let stand at room temperature for 30 minutes. (Make-ahead: Transfer roasting pan to refrigerator for up to 24 hours; bring out 1 hour before preheating oven.)

Roast beef, low and slow, in preheated 300°F oven for 2 hours or until internal temperature registers 145°F for medium- rare or continue to cook to desired doneness.

Remove beef to cutting board; tent with aluminum foil and rest for 20 minutes before untying from bones and carving across the grain.

Serve sliced prime rib with warm Zesty Goat Cheese Sauce.

A Dash of Advice

If serving more than 8 guests, double the recipe, using 2 roasts rather than 1 large one to keep the overall roasting time shorter.Use any extra sauce to make a delicious open-faced sandwich by serving over leftover (or sliced deli) roast beef topped with sautéed onions on a buttered, toasted bagel or bun. Leftover sauce is also tasty served over steamed vegetables like asparagus, broccoli or cauliflower.
