FINGER LICKING CORN RIBS

Ingredients

4 cobs of corn, shucked

2 tbsp Longo’s Essentials 100% Pure Canola Oil

2 tbsp Longo’s BBQ Rub

1/4 cup Longo’s Sweet & Spicy Grilling Sauce, divided 

2 tbsp chopped fresh Longo’s Basil (optional)

Directions

Trim tips of the corn cob to flatten, then cut each cob in half crosswise. Take one piece at a time, stand it up and cut it in half. Place the half cut-side down and cut in half lengthwise again to make “ribs.” Repeat with remaining corn and place in large bowl. 

Drizzle corn ribs with oil, then sprinkle with spice rub and add 2 tbsp of the grilling sauce. Coat corn ribs well and evenly. 

Place corn ribs on preheated medium grill for about 7 minutes. Turn over and grill for another 5 or 6 minutes until golden and corn is tender. Return to bowl and toss with remaining grilling sauce. Serve on platter and sprinkle with basil, if using.
