Ingredients

1 tbsp Longo’s Mediterranean Extra Virgin Olive Oil 

1 small onion, diced 

2 cloves garlic, minced 

1 1/2 cups Longo’s Long Grain White Rice 

1 tbsp Longo’s Essentials Oregano Leaves 

3 cups Longo’s Essentials Vegetable Broth 

100g Longo’s Macedonian Feta Cheese, crumbled (half a container) 

1/2 cup Longo’s Kalamata Olives, drained, pitted and chopped 

3 tbsp chopped fresh Longo’s Dill 

1/2 tsp lemon zest 

Directions

Heat oil in saucepan over medium heat and sauté onion and garlic for about 3 minutes or until softened. Stir in rice and oregano until coated. Add broth and bring to a simmer. Reduce heat; cover and cook on low for about 15 minutes or until broth is absorbed and rice is tender. 

Fluff with fork and stir in feta, olives, dill and lemon.
