GRILLED BREAKFAST FOR DINNER

Ingredients

1 pkg (about 350g) Longo’s Spinach and Feta Barese Sausages

1 Longo’s Baguette

3/4 cup Longo’s Flame Roasted Red Pepper Sauce

2 tbsp chopped fresh Longo’s Organic Basil

4 large Longo’s Enriched Coop Eggs 

Directions

Place sausages on preheated medium-high grill. Grill, turning occasionally for 6 to 8 minutes or until thermometer registers 165°F. Remove to cutting board and slice into 1-inch pieces. 

Slice baguette in severe diagonal slices and brush with 3 tbsp Longo’s Mediterranean Extra Virgin Olive Oil. Grill on one side for about 4 minutes or until grilled marked and golden; set aside.

Heat red pepper sauce and 1/3 cup water in cast iron skillet over medium-high grill, then stir in grilled sausage and basil; bring to a simmer. Crack eggs, one at a time, in small bowl and add to skillet. Close lid and cook for about 4 minutes or until eggs are set to desired doneness. Season eggs with salt and pepper, if desired. Serve with grilled baguette and sprinkle with more basil, if desired.

A Dash of Advice

On a rainy day, simply pan-fry the sausages in a non-stick skillet over medium heat on the stovetop and continue with the recipe.
