GRILLED CHICKEN RAMEN SALAD

Ingredients

1 pkg (500 g) Longo’s boneless skinless chicken thighs

1/2 cup Longo’s House Blend Dressing (approx.), divided

2 pkgs (85 g each) instant ramen noodles, flavour packet discarded

2 carrots, shredded

2 green onions, thinly sliced

8 cups Longo’s Organic Spring Greens 

Directions

Toss chicken thighs with 1/4 cup of the dressing. ’ 

Place thighs on oiled and preheated medium heat grill. Grill turning occasionally for about 12 minutes or until no longer pink inside and thermometer reaches 165’F. Remove from grill to cutting board and chop chicken. Scrape into a large bowl.  

Crumble up ramen noodles into bowl and add carrots and green onions. Toss with remaining dressing to moisten along with ’ tsp each salt and pepper. ’ 

Add a little more salad dressing to the greens and toss to combine. Serve ramen and chicken noodles over top of dressed greens. ’
