GRILLED GREEK POTATOES AND SHRIMP SKEWERS

Ingredients

600g Longo’s Yellow Fleshed Potatoes, sliced (4 to 6 potatoes)

2 tbsp Longo’s Mediterranean Extra Virgin Olive Oil

1/2 tsp lemon zest

1 tbsp fresh lemon juice

2 tsp Longo’s Essentials Oregano Leaves

1/2 tsp each salt and pepper

5 tbsp Longo’s House Blend Dressing (approx., divided)

6 Longo’s White Shrimp Skewers (thawed, if necessary)

4 cups Longo’s Organic Baby Arugula

1/3 cup Longo’s Crumbled Feta Cheese

Lemon slices (garnish)

Directions

Toss potato slices in large bowl with oil, lemon zest, lemon juice, oregano, salt and pepper. Place on preheated medium-high greased grill, turning occasionally, for 10 to 15 minutes or until slightly charred and tender. Place on platter. Drizzle about 3 tbsp of the dressing over shrimp skewers and toss to coat. Place on same grill for about 5 minutes, turning once, until slightly charred and cooked through. Toss arugula with remaining 2 tbsp dressing and place on top of potatoes. Top with shrimp skewers and sprinkle with feta to serve. Garnish with lemon slices.
