GRILLED SOCKEYE SALMON WITH CREAMY MUSTARD & CHIVE SAUCE

Ingredients

3 tbsp melted Longo’s Country Churned Salted Butter, divided

3/4 tsp each salt and pepper, divided

1 side sockeye salmon (about 1kg) 

Lemon wedges (optional)

Directions

Creamy Mustard & Chive Sauce: Stir sour cream with mustard, chives, honey, onion powder, salt and pepper. Let stand for at least 10 to 15 minutes to marry flavours. 

Arrange a large double layer of foil on baking sheet, folding edges to secure. Brush foil with half the melted butter. Sprinkle with 1/4 tsp each salt and pepper. 

Lay salmon, skin-side-down, on foil; brush with remaining melted butter and season with remaining salt and pepper. Use baking sheet to help slide the salmon onto preheated medium grill. Close lid and cook, without turning, for 14 to 16 minutes or until fish flakes when tested with a fork. 

Serve salmon with lemon wedges, if using, and Creamy Mustard & Chive Sauce on the side. 

A Dash of Advice

This recipe doubles easily to serve a hungry crowd. Substitute steelhead salmon for sockeye if desired. Leftover Creamy Mustard & Chive Sauce can be combined with drained Longo’s Curato Yellowfin Tuna in Olive Oil for a tasty sandwich filling.
