HUMMUS EGG BOWLS

Ingredients

1 pkg (454 g) Longo’s Classic Hummus (or your favourite flavour)

Half English cucumber, diced

2 small tomatoes, diced

1/2 cup Longo’s Crumbled Feta Cheese

8 large Longo’s coop eggs, lightly beaten

1 tbsp Longo’s Herb & Garlic Rub

1 pkg (250 g) Longo’s White Mini Pita Breads, grilled 

Directions

Divide hummus among 4 bowls or plates. Sprinkle with cucumber, tomatoes and feta cheese. Sprinkle with 1/4 tsp each salt and pepper. Drizzle with 2 tbsp Longo’s Mediterranean Extra Virgin Olive Oil.  

Whisk herb and garlic rub into eggs. Heat 1 tbsp Longo’s Mediterranean Extra Virgin Olive Oil in large nonstick skillet over medium high heat. Add eggs and cook, stirring and moving eggs in pan for about 4 minutes or until eggs are set. Spoon over hummus mixture. ’ 

Cut pita breads, if desired and serve with hummus bowls. ,

A Dash of Advice

Tip: Brush pitas lightly with Longo’s Mediterranean Extra Virgin Olive Oil and place on preheated grill over medium heat. Turn often for about 3 minutes or until grill marked and warm. ’
