LAYERED BACON AND CHEDDAR BISCUITS WITH CHIVES

Ingredients
5 slices Longo’s Beef Bacon or Longo’s Regular Cut Side Bacon
2 1/2 cups Longo’s Organic Unbleached All Purpose Flour
2 tbsp baking powder
1 tbsp granulated sugar
1 tsp salt
1/2 cup Longo’s Country Churned Unsalted Butter, cold and cubed
1 cup shredded old cheddar cheese, divided
3/4 cup buttermilk, cold, plus extra for glaze
1 large Longo’s Enriched Coop Egg, cold and lightly beaten
3 tbsp chopped fresh Longo’s Organic Chives
Directions
Pan-fry bacon until crispy; remove to plate lined with paper towels. Cut into chunks.
Place flour, baking powder, sugar and salt into bowl of food processor; pulse to combine. Add butter and half of the cheese. Pulse until mixture resembles coarse meal. Add buttermilk, egg and chives. Pulse just until dough just comes together.
Transfer dough to lightly floured work surface. Knead extremely lightly until dough holds together. Pat into a 7-inch square. Scatter half of the bacon and half of the remaining cheese over half of the dough. Fold the other half over. Pat again into a 7-inch square. Place remaining bacon and remaining cheese over half of the dough. Fold again and pat once more into a 7-inch square.
Cut dough into 8 even pieces. Transfer to baking sheet lined with parchment paper. Brush tops lightly with extra buttermilk. Bake in centre of preheated 425°F oven for 16 to 20 minutes or until puffed and golden.
