LEMON ROSEMARY SEA BREAM

Ingredients
1 pkg (640g) frozen Ocean Jewel Sea Breams, thawed, head on, scaled and gutted
Salt and pepper
1 lemon, thinly sliced
4 sprigs fresh Longo’s Organic Thyme
2 large sprigs fresh Longo’s Organic Rosemary
1/4 cup Longo’s Mediterranean Extra Virgin Olive Oil, divided
2 tbsp chopped fresh parsley
Directions
Rinse sea bream, including bellies, with running water. Pat dry inside and out. Slash each sea bream across both sides, about 3 times (approx.2 inches apart). Sprinkle generously with salt and pepper. Line the inside cavities with lemon slices, thyme and rosemary. Drizzle with 2 tbsp of the oil.
Place on preheated medium high greased grill for about 10 minutes per side or until well charred and fish is tender. Remove to platter, drizzle with remaining 2 tbsp oil and sprinkle with parsley to serve.
