LENTIL & BEET SALAD

Ingredients

1 pkg (400g) Longo’s Cubed Red Beets (about 3 cups) 

2 tbsp Longo’s Mediterranean Extra Virgin Olive Oil 

1/4 tsp each salt and pepper 

2 large local crisp apples, quartered, cored and chopped 

1 can (540mL) Longo’s Essentials Lentils, drained and rinsed 

2 cups cooked Longo’s Golden Couscous or Longo’s Organic Quinoa (see tip) 

2 cups Longo’s Organic Baby Arugula 

Dressing: 
1/3 cup Longo’s Mediterranean Extra Virgin Olive Oil 

1 tsp finely grated lemon zest 

1/3 cup fresh lemon juice (from about 2 large lemons) 

2 tbsp Longo’s Pure Liquid Honey 

2 tsp Longo’s Dijon Mustard 

1 tsp Longo’s Essentials Ground Ginger 

1/2 tsp salt 

Pepper to taste 

Directions

Dressing: Combine oil, lemon zest, lemon juice, honey, mustard, ginger, salt and pepper in jar or measuring cup and shake or whisk until emulsified. 

Toss beets with oil, salt and pepper. Roast in preheated 375°F oven for 25 to 30 minutes or until browned and tender. (Alternatively, transfer to microwave-safe bowl, cover and heat in microwave on High for 6 to 8 minutes.) 

Layer about 3 tbsp of the dressing and an equal portion of apples, lentils, beets, couscous and arugula into four 1L jars. Cap jars with lids and reserve in the refrigerator for up to 3 days. 

To serve: Transfer contents of the jar to large bowl and toss to combine. 

TIPS: 
Prepare couscous or quinoa according to package directions using Longo’s Essentials Low Sodium Vegetable Broth or water. Spread out on plate to cool. Leftover grains from the recipe can be measured into small freezer bags and used for another week’s prep or another use. Choose local apples that are less likely to brown such as Honeycrisp, Gala or Courtland. For a tasty source of extra protein, add Longo’s Solid Yellowfin Light Tuna in Olive Oil, well drained and broken into chunks, to the jars. 

When using fresh apples and pears, place them at the bottom of the jar closest to the dressing. The acidity helps keep them from browning.
