LONGO'S LOBSTER ROLLS

Ingredients

1 large, cooked lobster (about 2lb/1kg) or 8oz/227g cooked lobster meat 

1/4 cup Longo’s Tzatziki 

1/4 cup each finely diced English cucumber and celery 

2 tsp chopped fresh Longo’s Organic Dill 

Salt and pepper to taste 

2 tbsp Longo’s Country Churned Salted Butter, softened 

2 to 3 Longo’s Brioche Hot Dog Buns 

Boston lettuce leaves (optional) 

Directions

Twist off lobster tail and, using scissors, cut along underside to expose meat. Remove meat from shell. Place in bowl. Pull off claws and legs. Using meat mallet or seafood crackers, crack claws and legs and remove meat from shell. Add to bowl. Chop lobster meat into bite-sized pieces and return to bowl. 

Add tzatziki, cucumber, celery and dill; toss to combine. Season to taste with salt and pepper. (Make-ahead: Mixture can be stored in the refrigerator for up to 6 hours.

Spread butter on inside of buns and toast lightly in nonstick skillet over medium heat until golden. Fill buns with lobster mixture, adding lettuce, if using. 

A Dash of Advice

If large lobsters are not available, pickup 2 smaller ones, usually about 1 1/4lb each.
