MANDY'S THE FAVE SALAD

Ingredients

3 cups Longo’s Prepared Romaine Salad Mix

1 cup Longo’s Organic Baby Arugula

1/2 avocado, diced

1/2 cup pita chips

1/4 cup small raw broccoli florets

1/4 cup Longo’s Essentials Whole Kernel Corn

1/4 cup shredded carrot

1/4 cup shaved Longo’s Curato Parmigano Reggiano Cheese D.O.P.

2 tbsp Longo’s Organic Raw Shelled Sunflower Seeds

Honey Mustard Dressing:

1 cup Longo’s Essentials 100% Pure Sunflower Oil

6 tbsp Longo’s Pure Liquid Honey

1/4 cup Longo's Organic Apple Cider Vinegar

1/4 cup Longo’s Dijon Mustard

2 tbsp Longo’s Curato Balsamic Vinegar of Modena, Gold Edition

2 tbsp water

Longo’s Sea Salt, finely ground (to taste)

Directions

Honey Mustard Dressing: Combine oil, honey, cider vinegar, Dijon, balsamic vinegar and water in blender. Process on medium-high speed for about 5 seconds or until well combined and smooth. (If the dressing is too thick, add a little water to loosen.) Season with salt to taste.

Reserve 1/3 cup of the dressing for the salad and transfer remaining dressing to an airtight container and refrigerate for up to 7 days.

Toss together romaine, arugula, avocado, pita chips, broccoli, corn, carrot, cheese and sunflower seeds in large bowl. Drizzle reserved dressing overtop and toss to coat well.
