MAPLE BACON AND CHEDDAR BROCCOLI SALAD

Ingredients
5 slices Longo’s Regular Side Bacon
8 cups broccoli florets
1 cup diced Longo’s Cheddar Cheese
1/2 cup diced red onion
1/4 cup Longo’s Unsalted, Roasted
Sunflower Seeds
Dressing:
1/2 cup plain Greek or thick yogourt
1/4 cup Longo’s 100% Pure Canola Oil
3 tbsp Longo’s Pure Maple Syrup
2 tbsp Longo’s Dijon Mustard
1 tbsp Longo’s Apple Cider Vinegar
1/4 tsp each salt and pepper
Directions
Dressing: Whisk yogourt with oil, maple syrup, Dijon, vinegar, salt and pepper.
To prepare bacon, lay out in medium skillet set over medium heat; add 1 cup water and cook until water evaporates. Continue cooking, turning as needed, until crisp. Chop roughly.
Combine broccoli with chopped bacon, cheddar, onion and sunflower seeds; add dressing and toss to coat. Let stand for 15 minutes to meld flavours before serving. (Make-ahead: Salad can be coveredand refrigerated for up to 4 days.)
