NONNA ZINA’S PIZZA FROM SCRATCH

Ingredients

1/4 cup warm water

1/2 tsp granulated sugar

2 tbsp active dry yeast

6 cups Longo’s organic all purpose unbleached enriched flour (approx)

1 cup semolina

1 tbsp salt

1 large Longo’s enriched coop egg

1 cup Longo’s organic 2% milk

2 cups water (approx)

3 tbsp Longo’s light tasting olive oil

Nonna Zina’s Homemade Pizza Sauce

2 tbsp Longo’s Grapeseed oil

2 small onions, diced

1 can (796 mL) Longo’s essentials crushed tomatoes

1 tsp Longo’s essentials oregano leaves

1 tsp Longo’s essentials basil leaves

1 tsp salt

1/4 tsp pepper

Directions

Pizza Dough: Stir together warm water and sugar together in a small bowl; stir in yeast. Let stand for about 10 minutes or until starting to foam.

Whisk together flour, semolina and salt in a very large bowl. Pour in yeast mixture and egg; stir to combine. Add milk and slowly add in enough water, stirring to combine well to make a ragged soft dough.

Turn dough out onto well floured surface and knead until smooth, adding additional flour if necessary. Clean out bowl and coat with oil. Gather the dough into a ball and roll it in the oiled bowl to cover. Cover with Longo’s essentials parchment paper, tea towel and blanket. Place covered bowl in a cold oven with the oven light on. Let stand for 1 hour 30 minutes or until dough has doubled in size.

Punch down dough and divide into 3 equal balls. Place in oiled sealable bags and refrigerate for up to 1 day or freeze for up to 3 weeks if not using immediately.

Pizza Sauce: Heat oil in saucepan over medium heat. Cook onions for about 5 minutes, stirring often until softened. Add tomatoes, oregano, basil, salt and pepper; bring to a simmer. Cover and reduce heat to low and cook, stirring occasionally for about 30 minutes or until thickened.
