NONNA ZINA'S ZUCCHINI PIE

Ingredients

4 large Longo’s Enriched Coop Omega-3 Eggs

1/2 cup Longo’s Essentials 100% Canola Oil

1 cup pancake and baking mix (such as Bisquick)

1/2 cup Longo’s Grated Parmesan Cheese

1/2 tsp Longo’s Essentials Dried Oregano Leaves

1/2 tsp salt

1/4 tsp Longo’s Essentials Ground Pepper

3 small zucchini, thinly sliced into rounds (about 500g)

1 small onion, thinly sliced

Directions

Lightly spray a 9- or 10-inch pie plate with Longo’s Mediterranean Extra Virgin Olive Oil Cooking Spray; set aside.

Whisk together eggs and oil in large bowl. Whisk in baking mix, Parmesan, oregano, salt and pepper until combined.

Stir in zucchini and onion until well coated. Pour mixture into prepared pie dish and bake in preheated 350°F oven for 45 minutes or until golden brown and tester inserted in centre comes out clean
