OVEN BARBECUE CHICKEN

Ingredients

8 Longo’s Chicken Thighs (from Value Pack)

2 tbsp Longo’s BBQ Rub

1lb Longo’s Mini Potatoes, halved (quartered if large)

8 spears fresh asparagus

1/2 cup Longo’s Chipotle Grilling Sauce 

Directions

Trim any excess skin or fat from chicken thighs and coat with BBQ rub; place on one side of baking sheet lined with parchment paper. Bake in preheated 425ºF oven for 15 minutes. 

Meanwhile, toss potatoes and asparagus with 2 tbsp Longo’s Mediterranean Extra Virgin Olive Oil and 1/4 tsp each salt and pepper. Add potatoes to other half of baking sheet and return to the oven for about 20 minutes. Brush chicken with grilling sauce and add asparagus; return to the oven for about 10 minutes more or until chicken registers 165ºF when tested with thermometer and potatoes are tender. 

A Dash of Advice

Sprinkle potatoes with chopped fresh parsley, if desired. Try other Longo’s Grilling Sauces to change up the flavour of the chicken.
