OVEN ROASTED CHICKEN AND GREEN BEANS

Ingredients
1 pkg (750 g) Longo’s Chicken Thighs (about 6)
2 tbsp Longo’s Garlic & Herb Rub
500 g green beans, trimmed
1 pkg (255 g) Longo’s Seriously Sweet Tomatoes
2 tbsp Longo’s Curato Balsamic Vinegar (approx.)
Directions
Trim any excess fat or skin from chicken thighs and toss with rub to coat. Place beans in 13 x 9-inch casserole dish and toss with 2 tbsp Longo’s Mediterranean Extra-Virgin Olive Oil and 1/4 tsp each salt and pepper. Place chicken thighs on top.
Roast in 400°F oven for 20 minutes. Add tomatoes; cook for about 20 minutes more or until chicken reaches 165°F when tested with a thermometer. Drizzle with vinegar to serve.
