PEACH & BRIE GRILLED CHEESE

Ingredients
4 ripe but still firm peaches, peeled and thickly sliced
1 tbsp Longo’s 100% Pure Canola Oil
3 tbsp Longo’s Maple Habanero Grilling Sauce
8 slices Longo’s Sliced Brioche
1/4 cup Longo’s Country Churned Salted Butter, softened (approx.)
Half 500g round Longo’s Double Cream Brie Cheese, thinly sliced
8 to 12 large fresh Longo’s Organic Basil Leaves
Directions
Toss peach slices with oil; place on preheated medium grill and cook, turning often, for 4 to 6 minutes or until nicely grill marked but not mushy. Transfer to bowl and toss with grilling sauce.
Lay out bread and lightly butter one side of each slice. Place 4 slices, butter-side-down, on tray. Arrange half of the brie over the bread. Divide grilled peaches, any residual sauce and basil leaves between slices. Top with remaining brie, and cap with bread, butter-side-up.
Reduce grill temperature to medium-low and grill sandwiches, pressing with a spatula to flatten, for 1 1/2 to 2 minutes per side or until bread is toasted and cheese is melty.
