PESTO PROSCIUTTO WRAPPED SHRIMP

Ingredients
1 pkg (454g) Longo’s Extra Colossal Freshwater Shrimp 6-8ct, thawed and peeled
2 tbsp fresh Longo’s Basil Pesto Sauce (approx.)
3 to 4 slices Longo’s Curato Natural Prosciutto
6 to 8 Longo’s Seriously Sweet Grape Tomatoes
6 to 8 soaked 8-inch inch wooden skewers
Directions
Toss shrimp with pesto. Cut each slice of prosciutto in half, lengthwise, into 2 long strips.
Wrap shrimp with a strip of prosciutto, thread onto a skewer and finish with a tomato.
Grill shrimp on preheated greased grill over medium heat, turning often, for 3 to 5 minutes or until shrimp are cooked through (pink throughout) and prosciutto is nicely grill marked.
Arrange on a platter and drizzle with additional pesto, if desired, to serve.
