QUINOA GREEK SALAD

Ingredients
1 cup Longo’s Organic Quinoa
1 1/2 cups halved Longo’s Cherry Tomatoes
1 1/2 cups diced English cucumber
1/2 cup chopped red or green bell pepper
1/2 cup Longo’s sliced Kalamata olives
1/4 cup diced red onion
100g Longo’s Feta Cheese, drained and diced
Dressing:
1/2 lemon
1/2 cup Longo’s Greek Extra Virgin Olive Oil
2 tbsp Longo’s Curato Red Wine Vinegar
1 tsp Longo’s Essentials Oregano Leaves
Pinch each salt and pepper
Directions
Bring quinoa and 2 cups water to a boil in saucepan. Reduce heat and simmer gently for about 15 minutes or until water is absorbed and quinoa is tender. Cover and let stand for 5 minutes. Fluff with fork and let cool to room temperature.
Dressing: Meanwhile, squeeze juice from lemon into bowl. Whisk in oil, vinegar, oregano, salt and pepper; set aside.
Combine tomatoes, cucumber, pepper, olives and onion in large bowl. Add quinoa and drizzle with Dressing. Sprinkle with feta and toss well to combine.
