ROASTED GRAPE FLATBREAD

Ingredients

2 cups each red and green seedless grapes

1/4 cup Longo’s Mediterranean Extra Virgin Olive Oil, divided

2 cloves garlic, sliced

1 1/2 tsp chopped Longo’s Organic Fresh Rosemary

1/4 tsp each salt and pepper

1 pkg (700g) Longo’s Traditional Pizza Dough

Directions

Toss red and green grapes with 3 tbsp of the oil, garlic, rosemary, salt and pepper in bowl. Spread onto small baking sheet lined with parchment paper and roast in preheated 425°F oven for about 10 minutes or until grapes start to split. Let cool slightly. Meanwhile, on floured surface, cut pizza dough in half. Shape each into about a 12 x 5-inch-long oval. Place both ovals on large, oiled baking sheet. Brush edges with remaining 1 tbsp oil and top with mozzarella slices. Divide roasted grape mixture overtop of mozzarella. Coarsely crumble feta overtop and sprinkle with pistachios. Bake in preheated 425°F oven for 15 to 18 minutes or until dough is golden and bottom is crisp. Remove from oven and sprinkle with pomegranate arils and basil. Cut into triangles to serve.
