SHEET PAN CHICKEN SAUSAGE AND VEGETABLES

Ingredients

2 large carrots

2 zucchini, cut into chunks

4 tsp Longo’s Jerk Spice Blend, divided

1 pkg (500g) Longo’s Chicken Barese Sausages

1 Longo’s Artisan Baguette, sliced 

Directions

Using a vegetable peeler, peel 1 of the carrots to get long ribbons and place in large bowl. Cut the remaining carrot in thick diagonal slices; add to bowl. Add zucchini and drizzle with 3 tbsp Longo’s Mediterranean Extra Virgin Olive Oil and 3 tsp of the spice blend. Spread onto parchment-lined baking sheet. 

Cut sausages into separate pieces and toss with 1 tbsp Longo’s Mediterranean Extra Virgin Olive Oil and remaining 1 tsp spice blend. Place among vegetables on baking sheet. Roast in 425°F oven for about 20 minutes or until sausages are golden brown and thermometer registers 165°F. Serve with baguette.

A Dash of Advice

Tips: For added crunch, slice the baguette into long diagonal slices, brush lightly with Longo’s Mediterranean Extra Virgin Olive Oil and toast in 400°F oven for about 6 minutes or until light golden. Or look for other Longo’s breads in the bakery.
