SIMPLE LOBSTER AND CRAB SCAMPI

Ingredients

1 pkg (500g) Longo’s Curato Artisan Pappardelle

1/2 cup Longo’s Country Churned Unsalted Butter

2 tbsp minced fresh garlic (about 3 large cloves)

1 tsp freshly ground Longo’s Sea Salt

1/2 tsp Longo’s Essentials Crushed Chilies

Directions

Cook pasta in large pot of boiling, well-salted water until al dente. Reserve at least 1 cup of pasta cooking water before draining. Meanwhile, melt butter in large, deep skillet set over medium heat. Add garlic, salt and chilies; cook for 1 to 2 minutes or until fragrant. Add white wine; simmer for 5 minutes or until slightly reduced. Add lobster and crab along with lemon juice and zest to the pan; heat just until warmed through. Toss in hot pappardelle and parsley, adding reserved pasta water as needed to moisten. Serve immediately

A Dash of Advice

Tip: You will need approximately 1.25 to 1.5kg of steamed lobster tails and/or crab legs in the shell. Use seafood crackers and/or kitchen shears to remove the crab and lobster flesh from the shells.
