SMASHED CUCUMBER AND AVOCADO SALAD

Ingredients
6 Longo’s Mini Cucumbers
3/4 tsp Longo’s Sea Salt
1 large lime, juiced (about 3 tbsp)
1 jalapeño pepper, sliced
1/4 cup Longo’s Avocado Oil or Longo’s Essentials 100% Pure Canola Oil
1 tsp Longo’s Pure Liquid Honey
2 green onions, chopped
1/4 cup roughly chopped fresh Longo’s Organic Cilantro
1 pkg Longo’s Red and Green Lettuce or Mediterranean Mix (about 8 cups)
2 avocados, sliced
Directions
Cut cucumbers in half lengthwise and arrange, cut-side-down, on a heavy board. Use mallet or rolling pin to gently bash cucumber until skin is evenly cracked (but not smashed completely). Roughly chop cucumbers into bite-sized pieces. Transfer to a colander set over a bowl. Sprinkle evenly with salt and toss gently to combine. Let stand for 20 minutes.
Move colander with the cucumbers to a plate; reserve the liquid left in the bowl (there should be at least 2 tbsp). Stir the reserved liquid together with lime juice, jalapeño, oil and honey. Toss cucumbers with dressing mixture, green onions and cilantro.
Arrange lettuce mix on large platter. Use slotted spoon to arrange cucumber mixture overtop. Gently toss avocado with any remaining dressing in bowl. Spoon avocado over salad, drizzling with any residual dressing.
