SMASHED CUCUMBER BEEF SALAD

Ingredients
1 pkg (6 pack) Longo’s Mini Cucumbers
4 tbsp soy sauce, divided
4 tbsp seasoned rice vinegar, divided
2 Longo’s CAB Striploin Grilling Steaks (about 500g total)
3 cups coleslaw mix
Directions
Cut cucumbers into 2-inch pieces and then in half lengthwise. Place cucumbers into large sealable bag and gently smash them with your hands or a mallet to crack the skin. Place them into a colander and sprinkle with 1 tsp of salt; let stand in colander for 10 minutes.
Meanwhile, whisk together 2 tbsp each of the soy sauce and vinegar with 1/4 tsp pepper. Add steaks and turn to coat both sides. Let stand for 10 minutes.
Place steaks on preheated grill over medium-high heat and grill for about 8 minutes or until medium-rare. Place on cutting board and let rest for 2 minutes. Slice thinly.
Toss drained cucumbers with remaining soy sauce, remaining vinegar and 1/4 tsp pepper. Spoon onto slaw and toss gently to combine. Top with sliced striploin to serve.
