SMOKED PORK RIBS

Ingredients

2 racks pork back ribs (about 2kg)

3 tbsp Longo’s BBQ Rub

1 cup Longo’s Apple Cider

1/2 cup Longo’s Honey Dijon Mustard

1 cup Longo’s Chipotle Grilling Sauce 

Directions

Remove silver skin from back of ribs. Sprinkle rub all over ribs.

Place ribs in preheated 250°F smoker. Smoke for 2 hours, spraying or brushing every 30 minutes with apple cider.

Remove ribs from smoker and place each on large piece of foil. Mix any remaining apple cider with mustard and pour all over both sides of ribs. Wrap well and return to smoker for 2 hours or until tender and almost falling off the bone.

Carefully unwrap the ribs and return to smoker. Brush generously and frequently with sauce for about 30 minutes or until well glazed.
