SPICED FISH SHEET PAN DINNER

Ingredients

2 tsp Longo’s Essentials Curry

1 tsp Longo’s Essentials Chili Powder

1/2 tsp each Longo’s Essentials Garlic Powder and Longo’s Essentials Onion Powder

500 g fresh tilapia fish fillets

1 bunch fresh asparagus, trimmed

1 pkg (255 g) Longo’s Seriously Sweet Tomatoes

Lemon wedges (optional)

Directions

Combine curry, chili powder, garlic powder, onion powder, and 1/4 tsp each salt and pepper; set aside.

Drizzle both sides of fish with 2 tbsp Longo’s Mediterranean Extra Virgin Olive Oil to coat. Sprinkle spice mixture all over fish and place on one half of baking sheet lined with parchment paper.

Toss asparagus and tomatoes with 2 tbsp Longo’s Mediterranean Extra Virgin Olive Oil and 1/4 tsp each salt and pepper and place on other half of baking sheet.

A Dash of Advice

Tip: Serve with a dollop of plain Greek yogurt sprinkled with chopped cilantro, if desired.
