Ingredients

4 slices Longo’s Regular Sliced Side Bacon 

1 shallot, thinly sliced 

2 cloves garlic, minced 

1 pkg (255g) Longo’s Seriously Sweet Grape Tomatoes, halved 

1/4 tsp Longo’s Crushed Chilies 

1/4 tsp salt, divided 

1 pkg (142g) Longo’s Organic Baby Spinach or Kale 

2 large Longo’s Enriched Coop Omega 3 Eggs 

3 tbsp freshly grated Longo’s Curato Parmigiano Reggiano D.O.P. Cheese 

Chopped fresh Longo’s Organic Chives (optional) 

Directions

The addition of bacon in the “cloud” of the egg kicks up the flavour of these fun eggs. Serving them on a bed of spinach and tomato calls for some of Longo’s best bakery bread to sop up all the juices.

A Dash of Advice

If you want to feed a few extra, simply double the egg and cheese in the recipe and serve cloud eggs on a smaller amount of tomato spinach mixture.
