Ingredients
1 pkg (454g) wild Florida shrimp, 10-15ct, thawed and peeled
1/4 cup Longo’s Chipotle Dressing
10 to 15 Longo’s Cantina Style Blue Corn & Flax Seed Tortilla Chips (approx.)
1/2 small avocado, diced Fresh Longo’s Organic Cilantro Leaves, to garnish (optional)
Zesty Cocktail Sauce:
1/2 cup Longo’s Mild or Hot Seafood Cocktail Sauce
2 tbsp finely chopped fresh Longo’s Organic Cilantro
1 tsp finely grated lime zest
1 tbsp fresh lime juice
Directions
Zesty Cocktail Sauce:
Stir cocktail sauce with cilantro, lime zest and lime juice; set aside.
Toss shrimp with chipotle dressing to coat. Grill shrimp on preheated greased grill over medium heat for 2 to 3 minutes per side or until grill marked and pink.
Arrange chips on large platter. Top each chip with piece of shrimp, some avocado and a small spoonful of Zesty Cocktail Sauce.
Garnish with additional cilantro, if using.
