THAI SHRIMP TACOS

Ingredients

1 pkg (454g) Longo’s Large Beer-Battered Tempura Shrimp or 1 pkg (500g) Longo’s Extra-Large Coconut Breaded Shrimp

1 red bell pepper, thinly sliced

1 mango, peeled and julienned

1 pkg (320g) yellow corn blend tortillas

1/2 cup Longo’s Sweet Thai Chili Sauce (approx.)

Directions

Spread shrimp onto baking sheet lined with parchment paper. Bake in preheated 450ºF oven for about 15 minutes, turning once, or until golden brown.

Meanwhile, toss red pepper and mango together with 1 tbsp Longo’s Essentials 100% Pure Canola Oil and pinch each of salt and pepper.

Warm tortillas by toasting them lightly on both sides in a nonstick skillet over medium heat.

Divide pepper and mango mix into tortillas and top with shrimp. Drizzle each with chili sauce to serve.

A Dash of Advice

Be sure to remove the shrimp tails before enjoying the tacos. If you have some fresh cilantro in the fridge, add some leaves to the tacos.
